- focus on small plates for sharing – typically chips with different dips (queso fundido etc.), mini burritos, tacos (fish, duck/orange, chicken, summer vegetables etc., quesadilla, ceviche,
- also some tex-mex favourites like nachos…
- for mains, more authentic delicatessen such as Yucatecan style marinated chicken, a few fish varieties, Mole Poblano, and tortilla based favourites like shrimp and scallops, vegetarian enchiladas, etc.
- Ultimately the Mexican Executive Sous chef job should work with us to R&D engineer and refine the menu.
