Looking for an Executive chef that is familiar with elements of Japanese comfort food especially working with seasonal seafood. The main inspiration for the menu takes us back into the kitchen of our grandmother from Okinawa Japan with the best seafood found locally and globally. Authentic, approachable, simple, but yet creative food.
Examples of some traditional food with a creative twist…
Dishes that have been in the test kitchen are slow cooked Seafood Nabe pot with tomato saffron for a touch of familiarity to the locals. Chef has also composed Uni butter coated delicately around Japanese noodles with market select caviars. Some childhood favorites as Takoyaki (octopus balls) will take a local spin. We will also be bringing in White Charcoal Binchotan to grill our seafood, meats and vegetables. And of course the menu wouldn't be complete without bringing the best composed sushi rolls, sashimi and nigiris.
All in all, the menu will focus around the Japanese mom & pop concept found in the alley ways of Japan known as an "izakaya". A place to hang out with friends and family to create memories over amazing small portion food and beverages.
