  • Salary up to $75K + benefits
  • locations are around the DC Beltway
  • No desserts currently 
  • Two styles of Pullman bread, baguettes and brioche style buns 
  • high volume 
At some of their current restaurants they do 6 to 8 dozen buns, 12 to 16  Pullman loaves, and bread service for tables that are also used for french dips, which is approximately 6 to 8 dozen.
 
Although, this will be their largest restaurant (it is currently being built), so it could exceed those amounts by 20% to 30%.

JOB DECRIPTION
Client's Restaurant Group is looking for a qualified individual to join their team as a Bread Baker for their newest restaurant.  The individual should be prepared to work in a fast paced team environment, multi-task, work well with a large number of individuals, and lead the bakery in the production of high quality artisan bread and bread products from scratch and bread-related innovated lunch and dinner offerings in a high volume upscale-casual restaurant.

Principal Duties and Responsibilities:

  • Able to prepare a wide variety of bread products from scratch
  • Develop, plan, organize, and conduct formal training sessions for bakery staff
  • Plan, coordinate, and supervise the work activity through the day
  • Determine production and ensure the accuracy, quality, and consistency of food
  • Maintain inventory of foods and supplies for area of assignment and maintains controls over these areas
  • Able to spot problems and solve them quickly and efficiently
  • Maintain a level head and delegate many kitchen task simultaneously
  • Maximize the productivity of kitchen staff
  • Maintain impeccable personal hygiene as well as high work and safety standards
  • Actively participate in menu planning and the introduction of new products that meet established standards of quality and innovation
  • Responsible for creation of all bread-related goods applicable to the bakery menu
  • Set an example for staff
  • A passion and love for food and service must be evident
  • Computer literacy
  • Responsible for creation of all bread-related goods applicable to the bakery

Education and Experience:

  • High school diploma or equivalent
  • Culinary degree from accredited university
  • Minimum of five years in a hotel, restaurant, or other comparable entity bakery with at least two years in a lead role.
